Sometimes I get it into my head that I really want a certain food even if I don’t have any stocked up. I’m pretty sure everyone gets that, but since my brain doesn’t joke about food (at least until after I’ve finished eating it) I usually end up having to find a way to make it even if I don’t have the right ingredients.
So that’s what happened here. I demanded pesto. I didn’t have pesto or even the ingredients to make traditional pesto. So I ended up making it out of whatever I had at home. It turns out a leafy green thing, a nut thing and a cheese thing work even if they’re not strictly the right ingredients for the recipe*.
So far I’ve eaten this stuff in toasties, with pasta and drizzled on-top of a pizza. Have it however you want, it’s really versatile, stupidly simple and ridiculously green!
*Within reason, don’t try to be a clever dick.
- 85g walnuts, toasted
- 85g cheddar
- 85g curly kale
- 3 cloves garlic
- 75ml extra virgin olive oil
- juice of 1 lime
- ½ red pepper, deseed
- Put all of the ingredients in a blender and blend until you have ready your desired consistency.
